In Moscow, at the 3rd National Congress of Victuallers and Caterers Karelia was a newcomer. The key goal of the Congress is to put together the best experts of this sector for discussing and tackling professional problems. One of the objectives of the Congress is to identify the best professionals in the Russian catering business, make up a national rating, and award the Annual National Prize “Golden Crane”.
It is quite symbolic that a wonderful lady representing our Republic at such a high-level event brought a distinguished award. Among the best, Taisia Mukha, the Director of Saloon Ligea Cafe was awarded Diplomas “The Best Restaurants of the 21st Century” and “For Personal Contribution into Development of Catering Business in a Russian Region”. This is far from the only award of Taisia Ivanovna Mukha: honourary diplomas, prizes in National Contests for original dishes, certificates, etc. But this presumably is not the main thing.
Taisia Mukha has a lot of friends all over the nation. Her attractiveness comes down to the beauty and charms, but also to high professionalism, capacity to be a leader, propose new approaches and solutions. On the whole, she has a really distinguished and original personality.
Taisia Mukha is famous for her professionalism not in Karelia only but also abroad. While working for Finnish well-known restaurants, Taisia held Weeks of the Karelian Cuisine. The success was so tremendous that she was proposed to head up a restaurant specialising in the Karelian cuisine.
In 1998-1999 in Neubrandenburg and in 2000-2001 in Tьbingen, Taisia as a member of official delegations of the Republic of Karelia attended festivities of Petrozavodsk’s sister cities and displayed pieces of art of the Karelian cuisine - and again the success defied description. The Karelian cuisine was recognised the best, and Taisia became a runner-up of the Russian National Congress of Victuallers. Today, after her victory in the Congress, Taisia has become a member of the Russian National Club “Golden Crane”.
For almost thirty years now Taisia Mukha is a Hospitable Hostess in the widest and honourray sense of this word. The art of hospitality and delicious treating can hardly be taught at school: this should be inborn. Foreign visitors, famous actors, eminent scholars, well-known politicians and even Russia’s President Vladimir Putin took back recollections about her care, warm reception and sophisticated meals.
- Taisia, could you tell me as a well-recognised professional what such events as the Congress give to the public?
- The Congress is a nice opportunity for resuming professional ties, professional communication and restoring sectoral traditions. This is also an opportunity to get together for people who keep in their hands as much as the nation’s health because health is, above all, correct dieting.
Nowadays, the catering business lives through a tendency that troubles me a lot. National and traditional cuisines tend to merge and, thus, lose their features. One of the factors impacting this process is the stress of our life – people eat more fast food full of surrogates and convenience food. I guess this harms both our body and spirit because eating is not just filling your stomach but a philosophy.
I think that we, professionals of the catering business, should think of what the key thing in our job is. It is obvious that we should share experiences and adapt the best practices. And in the first place let it rather be traditions and advantages of national cuisine than new and exquisite recipes.
If speaking about the Karelian cuisine, its primary merit has always been good quality of the products offered in abundance by the Karelian land. Our lakes give us fish, and the forest gives berries and mushrooms. All these things have and will have an outstanding and authentically Karelian taste.
When preparing Karelian dishes we think first about how to preserve all valuable elements and vitamins and how they can be added for the sake of our health.
Besides, there are certain combinations of products, which give maximum healthy effect and, alongside, make a dish delicious and nutritious.
I would like to remind you that there is relationship between a person’s residence and products this person eats.
We, the northern people, can of course treat ourselves to some exotic food just for a change, yet I would not advise doing it often. A human body assimilates best the products that grow in the area where you were born or live most of your life.
We can talk for hours about cuisine and dieting culture.
From our side, I am always ready to hold a master class or a Week of the Karelian Cuisine. I am sure that the opportunity to share our findings and secrets with foreign colleagues would be of much use.
